I assume it will produce a baby horse.
Is there anything whatsoever I can do to make the baby horse stay a baby horse, and not turn into a grown-up horse?

If you hover enough over them and don't let them experience the real world, then they will likely mature much slower. I would suggest doing its homework for it, don't let it have a vibrant social life, and only let it watch PBS. The less exposure to the outside world, the better.
