Have you ever build on the server (if can please post images): On the server just my house (pretty cool if I say so myself), but on single player, I've built two lighthouses and several statues and pixel art creations.
can you build with a 5k budget: For what you're describing, probably not. A 7k or 8k max budget would be more reasonable.
And how long does your builds take: Without fly feature probably between five days to a week hopefully. -
