I was having a discussion yesterday with a few people online including Rezonl about the projects I've worked on before and he asked for pictures so I figured I'd post them. I was a part of a server for a few months until the person that hosted it took it down, and now he no longer hosts that server. However, I was able to get my hands on the save file and keep what I had made.
As a precursor, this was your typical SMP server (except no mobs). Everything I made here is completely legit, I mined and earned everything without any inventory edits, worldedit or help from any other tool. Note: On project 3 I was able to utilize a wool store to purchase some wools/dyes I couldn't obtain since we lacked mobs.
1. The Master Sword
My first project was to create a replica Master Sword in the pedestal. Not too impressive size-wise, but it required mining 65 blocks (585 ingots) of iron, 4 blocks (36 ingots) of gold and a fair amount of lapis.
2. nyan cat
I caught the nyan fever and had to make a replica pixel-art style. I spent most of the time gathering the wool and dyes for this (~90%), building it was fairly easy. Below you can see the automated cacti/reed farms I made as well.
3. Epic Sax Guy
The most impressive project I finished on this server. It stood almost 100 blocks tall and took up an incredible amount of space. It required over a month to finish; the area I built it on was originally ocean next to spawn but I wanted it to be there for all to see so I spent a few days filling in the ocean that was 1-4 squares deep to make the solid block of sand. I next had to dig quite a lot. Because the replica would need to go about 16 blocks below sea level, AND I wanted people to be able to see that part that was below sea level, I dug out a hole that was 62x25x16, which ended up being just under 30,000 blocks. Please keep in mind that this was completely legit and did not use world edit. I then gathered the wool and dyes (see note above) and sand and other blocks and finally was able to finish this. I had future plans to continue digging out the hole and building a 'shrine', per se, including the full Epic Sax Guy song with noteblocks.
Other than these three I had a massive cave and mine system I used and a pretty nifty underground base, but I figure those weren't worth posting. I also made a few server-related projects like farms and shops and towns. I had a fourth project, and it was the most impressive, time-consuming and ambitious project yet, but the server went down in the middle. That project had already taken nearly a month as well but I got busy with graduation as well as moving so it never got finished.
If you read all of this and didn't tl;dr it thank you very much. I hope you enjoyed.

-edit: The world itself is actually really neat; people build quite a lot beyond what I made. It's available for download if any of you wanted it.
