I apologize for being a bit late replying to this.
Yes, like I said, ores don't have a market due to supply. You can literally mine hundreds if not thousands of ores a day - Compare that to the limit of less than 10 nether stars per a day and the large amount of nether stars needed to create a star tool (2,000 for a melon sword!).
Sure, there's always demand for diamonds - They're an essential aspect of the game. I do disagree however, that the diamond market will get worse over time. The player market price for diamonds is just a couple dollars if not less above the sell price - The essentials sell feature acts as a price floor for items that aren't able to have a market on their own, like the diamond market - It's already as worse as it can get.
I highly disagree with the notion that everyone uses cash instead of nether stars - There is still a robust market, and I know and have personally seen many players go around, buying nether stars to make star tools - Not to mention, you also need nether stars to get certain collectibles, such as dragon eggs and music discs - Oh, and I might also add the nether star collector chest, a goal for many players. I can also argue that players buy nether stars to get even more star tools - Star tools give them progression in the game. There's still quite a robust market for nether stars.
Sure, there's a large amount of people who own star tools, but most star tools just stay locked up in vaults - Only a fraction of star tool owners sell their star tool - Most star tool owners just keep their tool and grind with it. I may also mention, as I've stated in the above paragraphs, players who own star tools still go around, buying nether stars and such for more star tools, medals or collectibles - The market is balanced and stable, and I can see it being that way in the future. Your argument is extremely hypothetical and more based on "what if" than any actual evidence (Sure, you provided examples, but comparing the nether star market to the EXP or diamond market is like comparing apples to oranges.).

No one sells them to the server, except Builders who don't realize they are worth more

Yup, it's pretty stupid at the moment because new builders just /sell hand sometimes without knowing they've just wasted a decent amount of starting-off money. +1

+1 We don't need money being put into the economy, sooner or later it's going to affect us so why not stop it while we are ahead.

Having the server price is pointless when the cost is already determined by the user market. +1
