I don’t know if this is intentional or not, but when I turn off Interact in my town, I cannot access any chests in said town, despite the fact I am the original owner and one of the listed owners. The town is Canterlot.
I can break the chest, but I cannot open it

Are you doing 'interact -g non_owners deny' or just 'interact deny?' If the latter then that disables it for all users.
Also if your name under owners is listed as "name:jdawger" try adding yourself as owner so that it's just your name listed. I had to add my name as owner in my town called bowser but I'm scared to remove "name:videowiz92" in case that removes my perms as well.-

I figured it out. I went to the worldguard wiki to fix it since the ECC wiki was lacking an explanation on the latter part of the command.

I would hazard most users will want to deny non-town members from interfering with their town so I added the -g nonmembers to the main command, I also added a line explaining that if they wished to block all users(town members and not) from that interaction they simply need to omit the "-g nonmembers".
