So all the time I've put into survival I've never joined a town. I really don't know much about them. What are the pros of being in a town?

Well really, it's hard to have any advantages economically if you own a town for a short time.
- Towns rely on a constant flow of money into the town.
- Towns cost 7500 to create, and for every plot you have to pay 1000.
- Towns also require upkeep based on players/chunks claimed.
This shouldn't stop you from creating a town, and in the case that you have some cash to spare go for it!
If you plan on keeping the town self-sustaining, you'll need to assign a reasonable tax to your townspeople and recruit as many people as you can. Some towns opt out of taxes and have members vote daily/voluntarily contribute to the bank. This works too!
All in all, towns will most likely not net you profit. Towns are a way to make your settlements into an entity, a sort of membership that not only protects your grief but gives you or your townspeople a sense of group/membership.
Would I make a town? Probably not.-
