    Is it possible to create chestshops that put money somewhere other than your balance? Or in someone else’s balance? I doubt it, I just might as well ask

    Also, is there a way to lock your own chests from yourself?

    You cannot make your own chest shop put money anywhere other than your own balance. And why would you want to lock a chest so even you can't access it?
