In my opinion this will probably be hated and loved among different users. People who are new to Minecraft will probably enjoy it as it makes it easier to craft, but for people like me, who have been playing Minecraft since or almost when it got released will find it very different and hard to adapt to.
My question is, would we be able to toggle the option of using this FastCraft plugin? That'd probably make a nice addition for us then, but it would be quite a big change to our gameplay. Also, the toggling part might be a lot of work (being that we may not be able to edit it).

There is an option on it to go to the crafting grid comes with the plugin so there would be no hassle. :)

I like the idea of instant crafting although I'd much rather have a /craft command and bypass the GUI. I just want to be able to /craft stonebrick.

This would be useful for some people I think the idea is great but I personally don't like it. If it would be possible to toggle it on and off that'd be great

No sorry. /craft is being investigated, but it's honestly not worth the amount of work required.
